Being from Switzerland, my family has made Bircher Muesli for as long as I can remember. I’ve had it in five star restaurants and fancy hotels all over the world and it is always disgusting, they never make it right – with the exception of the Swiss, clearly they make it right… Below is the best way to make it, the end result is flavorful, has a great texture and is easy to prepare. Also, it’s gluten free – Enjoy!
Bircher Muesli
7 min prep, oats should soak 10-30 min.
Ingredients
½ cup Old Fashioned Rolled Oats
¼ cup Milk (Almond, Coconut, Soy or Dairy)
1 large Apple
2 shakes Cinnamon
1 tiny pinch Sea Salt
1 teaspoon Honey (more to taste)
⅛ cup chopped Almonds
2 tablespoons Raisins
1 tablespoon Dried Blueberries
1 teaspoon Chia Seeds (optional)
Your favorite fruits such as:
Blueberries
Raspberries
Chopped up:
Strawberries
Peaches
Nectarines
Pears
Instructions
Soak for up to 30 minutes: ½ Cup Oats in the Milk (use just enough milk so the oats aren’t drowning but you should see milk pool around oats, if too much milk add more oats). You may use Almond, Coconut, Dairy or any other milk you have.
Use a grater with large holes (do not use the fine holes or it will be too mushy), grate the apple and add to the oats, mix well. Add cinnamon, sea salt and honey to taste. Add almonds (or any of your favorite nuts), raisins and/or dried blueberries and mix well. Lastly, gently fold in your favorite fruits such as blueberries, raspberries, chopped strawberries, peaches, nectarines, or pears.
Sprinkle with optional chia seeds before serving. Serve immediately. Bircher Muesli does not sit well for long periods of time and is particularly unpleasant after a day in the fridge. Fresh is best!
Notes
Traditional Bircher Muesli uses either heavy whipping cream lightly whisked or plain vanilla yogurt. I don’t use them often unless I have it on hand. If you have either of these ingredients feel free to try it and see if you like it. Use about 1 tablespoon of either but not both.
Avoid using bananas, melons or citrus fruit such as oranges and grapefruit.
Do not use quick rolled oats or steel cut oats. These do not work well, you must use old fashioned rolled oats.
