This delicious cake is super easy to make and boasts simple ingredients. It’s light and fluffy and filled with apples that puff when cooked. Make this GLUTEN FREE by substituting regular flour with oat and rice flour. See notes below.
Lush Apple Cake

Ingredients
5 large Apples (peeled and cored)
Juice of 1 Lemon
3 Eggs
1 cup (200 g) Sugar
1 teaspoon Vanilla Extract
¾ cup Coconut Oil
3 fl oz Brandy
1 teaspoon Cinnamon
1 teaspoon Baking Soda
⅛ teaspoon Salt
2 cups (280 g) Flour
For dusting combine:
2 tablespoons sugar
1 teaspoon Cinnamon
Instructions
Preheat oven to 350°F.
Oil or butter a 10 inch diameter springform pan.
Dice 4 apples in ½ inch cubes, add lemon juice from ½ a lemon and set aside. Slice the remaining apple into thin slices, sprinkle with lemon juice and set aside. If your coconut oil is solid or white melt it by setting jar in warm water until oil is clear and smooth.
Using an electric mixer beat the eggs, sugar and vanilla extract for 8 minutes until pale and thick. Lower the speed and add the brandy, liquid coconut oil, salt, cinnamon and baking soda. Gradually add flour, then fold in diced apples. Pour batter into pan and arrange apple slices on top of the cake in a pretty pattern. Sprinkle dusting sugar and cinnamon on top of the cake.
Bake for 65-75 minutes until the cake is golden and a fork comes out dry with a few crumbs stuck to the fork. Cool for 10 minutes, release from the pan and cool completely on a rack. Enjoy!
Notes
I prefer mixing my apples such as: Granny Smith, Pink Lady and Fuji.
Make this GLUTEN FREE by substituting regular flour with 1 cup Oat Flour and 1 cup Rice Flour (or use 2 cups Sweet White Rice Flour only).
If you don’t have Brandy, use 1½ fl oz of Grand Marnier.
For high altitude cooking (elevations above 2,000 feet) adjust the recipe with the following:
Use ⅔ cup plus 4 tablespoons of sugar, ¾ tsp baking soda, ¾ cup plus 2 tbsp of coconut oil, 1 ¾ cups flour (for GLUTEN FREE use 1 cup oat flour and ¾ cup brown rice flour, or use 1 ¾ cup sweet rice flour only). Set the oven temperature to 365 degrees.
